Ingredients:

  • 5 cups fresh baby spinach (about 150g)
  • 2 cups strawberries, hulled and sliced (about 300g)
  • 1/2 cup crumbled feta cheese (about 75g)
  • 1/4 cup sliced almonds (about 30g)
  • 1/4 cup balsamic vinegar (about 60ml)
  • 1/4 cup olive oil (about 60ml)
  • 1 tablespoon honey (about 15ml)
  • 1/2 teaspoon Dijon mustard (about 2g)
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, whisk together balsamic vinegar, honey, and Dijon mustard.
  2. Slowly drizzle in olive oil while whisking until combined.
  3. Season with salt and pepper to taste.
  4. In a large serving bowl, add fresh spinach.
  5. Top with sliced strawberries and crumbled feta cheese.
  6. Sprinkle sliced almonds over the top.
  7. Drizzle the balsamic vinaigrette over the salad.
  8. Toss gently to combine, ensuring all ingredients are coated.
  9. Serve immediately as a refreshing side or light main dish.
