Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach, stemmed and washed
- 3 cups vegetable broth or chicken broth
- 1 cup crème fraîche
- Salt and pepper, to taste
- 1 teaspoon lemon juice (optional)
- Fresh herbs or croutons for garnish (optional)
Instructions:
- Heat olive oil in a large pot over medium heat.
- Sauté the chopped onion until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Stir in the fresh spinach and cook until wilted, about 3-4 minutes.
- Pour in the vegetable or chicken broth and bring it to a simmer.
- Cook for an additional 5-10 minutes to allow flavors to meld.
- Remove from heat and let cool slightly.
- Blend the soup until smooth using a blender or immersion blender.
- Return to the pot, stir in crème fraîche, and heat gently.
- Season with salt, pepper, and lemon juice to taste before serving.
