Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, stemmed and washed
  • 3 cups vegetable broth or chicken broth
  • 1 cup crème fraîche
  • Salt and pepper, to taste
  • 1 teaspoon lemon juice (optional)
  • Fresh herbs or croutons for garnish (optional)

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the chopped onion until translucent, about 5 minutes.
  3. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Stir in the fresh spinach and cook until wilted, about 3-4 minutes.
  5. Pour in the vegetable or chicken broth and bring it to a simmer.
  6. Cook for an additional 5-10 minutes to allow flavors to meld.
  7. Remove from heat and let cool slightly.
  8. Blend the soup until smooth using a blender or immersion blender.
  9. Return to the pot, stir in crème fraîche, and heat gently.
  10. Season with salt, pepper, and lemon juice to taste before serving.
