Ingredients:
- 15 large fresh mint leaves
- 2 tbsp simple syrup
- 2 oz fresh lime juice
- 4 oz white rum
- 1 oz coconut rum
- 0.5 cup full-fat canned coconut milk
- 0.5 cup sparkling water
- 0.25 cup fresh pomegranate arils
- 2 sprigs fresh mint
Instructions:
- Phase 1: In the bottom of a cocktail shaker, combine fresh mint leaves, simple syrup, and lime juice. Use a muddler to press down firmly and twist 4–5 times until fragrant without shredding the leaves.
- Phase 2: Add white rum, coconut rum, and coconut milk to the shaker. Fill halfway with ice, seal, and shake vigorously for 15 seconds until the shaker feels frosty and the liquid is emulsified.
- Phase 3: Strain the mixture evenly into two ice-filled glasses. Top with chilled sparkling water and stir gently. Garnish with pomegranate arils and a mint sprig.
