Ingredients:

  • 1 cup (90g) rolled oats
  • 1 medium ripe banana (about 100g)
  • 1 cup (240ml) unsweetened almond milk (or milk of choice)
  • 2 large eggs
  • 2 tablespoons (30ml) honey or maple syrup
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional: ½ teaspoon ground cinnamon

Instructions:

  1. In a mixing bowl, mash the banana until smooth. Add almond milk, eggs, honey (or syrup), and vanilla. Whisk until well combined.
  2. In another bowl, mix the oats, baking powder, baking soda, salt, and optional cinnamon.
  3. Pour the wet mixture into the dry ingredients and stir until just combined – don’t overmix!
  4. Turn on the waffle iron and let it preheat according to the manufacturer’s instructions.
  5. Grease the waffle iron lightly if needed and pour a ladleful of batter into the center. Close the lid and cook until golden brown and crisp (about 5 minutes).
  6. Carefully remove the waffles and serve warm with your favorite toppings.
