Ingredients:
- 1 cup (90g) rolled oats
- 1 medium ripe banana (about 100g)
- 1 cup (240ml) unsweetened almond milk (or milk of choice)
- 2 large eggs
- 2 tablespoons (30ml) honey or maple syrup
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- Optional: ½ teaspoon ground cinnamon
Instructions:
- In a mixing bowl, mash the banana until smooth. Add almond milk, eggs, honey (or syrup), and vanilla. Whisk until well combined.
- In another bowl, mix the oats, baking powder, baking soda, salt, and optional cinnamon.
- Pour the wet mixture into the dry ingredients and stir until just combined – don’t overmix!
- Turn on the waffle iron and let it preheat according to the manufacturer’s instructions.
- Grease the waffle iron lightly if needed and pour a ladleful of batter into the center. Close the lid and cook until golden brown and crisp (about 5 minutes).
- Carefully remove the waffles and serve warm with your favorite toppings.
