Ingredients:
- 2 lbs (907g) Ground beef (80/20 lean-to-fat ratio)
- 1 cup (100g) Seasoned breadcrumbs
- 2 large Eggs, beaten
- ½ cup (60g) Onion, finely diced
- ¼ cup (30g) Fresh parsley, chopped
- 2 cloves (6g) Garlic, minced
- 1 tsp (6g) Salt
- ½ tsp (3g) Black pepper
- 1 tbsp (15ml) Worcestershire sauce
- ½ cup (120ml) Ketchup
- 2 tbsp (30ml) Brown sugar
- 1 tbsp (15ml) Apple cider vinegar
- ½ tsp (3g) Garlic powder
Instructions:
- In a large bowl, combine the ground beef, breadcrumbs, eggs, onion, garlic, parsley, salt, pepper, and Worcestershire sauce. Gently mix with your hands until just combined, avoiding overworking the meat to maintain tenderness.
- Preheat the oven to 375°F (190°C) and line a rimmed baking sheet with parchment paper.
- Transfer the meat mixture to the center of the baking sheet and form it into a smooth log approximately 4 inches wide and 8 inches long with rounded sides.
- Whisk ketchup, brown sugar, apple cider vinegar, and garlic powder in a saucepan over medium heat until the sugar dissolves and the mixture bubbles.
- Brush half of the glaze over the top and sides of the loaf. Bake for 40 minutes.
- Remove from the oven, apply the remaining glaze, and bake for another 10-15 minutes until the internal temperature reaches 160°F (71°C) and the glaze is a deep mahogany brown.
