- 2 pounds flank steak or skirt steak
Instructions:
- In a mixing bowl, combine lime juice and olive oil.
- Add minced garlic, chili powder, cumin, smoked paprika, salt, pepper, and cilantro (if using).
- Whisk until fully combined.
- Place beef in a plastic storage bag or container.
- Pour marinade over the beef, ensuring it is evenly coated.
- Seal bag/container and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).
- Preheat grill or skillet over medium-high heat.
- Remove beef from marinade, letting excess drip off.
- Grill or sauté beef until desired doneness is reached (about 4-5 minutes per side for medium-rare).
- Let rest for 5 minutes, then slice against the grain.
