Ingredients:
- 2 large cucumbers (English or Persian), thinly sliced (about 500g / 1.1 lbs)
- 1/2 medium red onion, thinly sliced (about 75g / 2.6 oz)
- 1/4 cup fresh dill, chopped (about 10g)
- 1/2 cup white vinegar (120ml / 4 fl oz)
- 1/4 cup granulated sugar (50g / 1.7 oz)
- 1 teaspoon kosher salt (5g)
- 1/2 teaspoon black pepper (2.5g)
- 1/4 cup water (60ml / 2 fl oz)
Instructions:
- In a medium bowl, whisk together the white vinegar, sugar, salt, pepper, and water until the sugar and salt are dissolved.
- Thinly slice the cucumbers and red onion. A mandoline can speed up this process but is not essential.
- In a large mixing bowl, combine the sliced cucumbers, red onion, and chopped fresh dill.
- Pour the pickle brine dressing over the cucumber mixture.
- Gently toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Give it another toss before serving.
