Ingredients:
- 1 tablespoon vegetable oil
- 1 pound ground pork (or ground chicken or beef)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 4 cups shredded cabbage
- 1 cup shredded carrots
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
- Optional: 1/4 teaspoon red pepper flakes
- 8-10 egg roll wrappers
- 1 large egg, beaten
- Cooking spray
Instructions:
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground pork (or chosen protein) and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add the chopped onion, minced garlic, and grated ginger to the skillet. Sauté for 2-3 minutes, or until fragrant and softened.
- Stir in the shredded cabbage and carrots. Cook for another 3-5 minutes, or until the cabbage starts to wilt.
- Add the soy sauce, rice vinegar, sesame oil, sugar, ground ginger, black pepper, and red pepper flakes (if using) to the skillet. Stir well to combine. Cook for 1-2 minutes, allowing the flavours to meld. Remove from heat and let cool slightly (about 10-15 minutes).
- Place an egg roll wrapper on a clean, flat surface. Position it so that one corner faces you. Place about 1/4 cup of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the left and right corners, overlapping slightly. Brush the remaining top corner with the beaten egg. Roll the egg roll tightly away from you, sealing the edge with the egg wash. Repeat with the remaining wrappers and filling.
- Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray. Place the air fryer egg rolls in the basket in a single layer, ensuring they are not touching. Spray the egg rolls lightly with cooking spray.
- Air fry for 6-8 minutes per side, or until golden brown and crispy. Flip halfway through cooking. Keep a close eye on them – air fryers can vary in cooking time.
- Remove the air fryer egg rolls from the air fryer and serve immediately with your favourite dipping sauce.
