- 1/4 cup (50g) granulated sugar
- 2 tablespoons (15g) cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon almond extract
- 1/4 teaspoon ground cinnamon
- 1 cup (120g) all-purpose flour
- 1 cup (90g) rolled oats (not instant)
- 1/2 cup (100g) packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (113g) cold unsalted butter, cut into cubes
Instructions:
- In a large bowl, combine cherries, sugar, cornstarch, lemon juice, almond extract, and cinnamon. Mix well to coat.
- Pour the cherry mixture into a 9-inch baking dish, spreading evenly.
- In a separate bowl, combine flour, oats, brown sugar, cinnamon, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the crisp topping evenly over the cherry filling.
- Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the topping is golden brown and the cherry filling is bubbling.
- Let cool for at least 15 minutes before serving this perfect cherry crisp.
