Ingredients:

  • 1 cup (225g) unsalted butter, softened to room temperature
  • 3 ½ cups (420g) powdered sugar, sifted
  • ¾ cup (65g) unsweetened cocoa powder, sifted
  • 3 tbsp (45ml) whole milk
  • 2 tsp (10ml) pure vanilla extract

Instructions:

  1. Sift the powdered sugar and unsweetened cocoa powder together into a large bowl to remove lumps. Note: This is the only way to avoid the sandy texture.
  2. Place the softened butter in the mixer bowl. Beat on medium high speed for 3-5 minutes until the butter turns a pale ivory color and looks fluffy.
  3. Turn the mixer to the lowest setting. Gradually add the sifted sugar and cocoa mixture in three batches. Note: Adding it slowly prevents a cocoa cloud from taking over your kitchen.
  4. Once the powder is mostly incorporated, increase the speed to medium for 1 minute.
  5. Add the vanilla extract and milk.
  6. Whip on high speed for an additional 2 minutes until the frosting forms a soft, glossy peak.
