Ingredients:

  • 1 kg fresh spinach OR 500g frozen spinach, thawed and squeezed dry
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 225g feta cheese, crumbled
  • 115g cream cheese, softened
  • 2 large eggs, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh dill (or 1 teaspoon dried)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs
  • 1 tablespoon melted butter

Instructions:

  1. Sauté onion and garlic in olive oil until softened. Add spinach and cook until wilted (if using fresh) or heated through (if using frozen). Season with nutmeg, salt, and pepper. Drain VERY well.
  2. In a large bowl, combine feta cheese, cream cheese, eggs, Parmesan, and dill. Mix well.
  3. Melt butter in a saucepan. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Simmer until thickened. Season with salt and pepper.
  4. Combine the spinach mixture with the cheese mixture. Pour into the prepared baking dish. Pour the cream sauce over the top.
  5. Mix breadcrumbs with melted butter and sprinkle over the casserole.
  6. Bake in a preheated oven at 175°C (350°F) for 30 minutes, or until golden brown and bubbly.
  7. Let stand for 5-10 minutes before serving.
