Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 pounds or 680 grams)
  • 2 tablespoons olive oil (30 ml)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (5 grams)
  • 1 teaspoon onion powder (5 grams)
  • 4 cups cherry tomatoes, halved (about 600 grams)
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano (1 gram)
  • 1 teaspoon fresh basil, chopped (or ½ teaspoon dried) (1 gram)
  • 1 tablespoon balsamic vinegar (15 ml)
  • Zest of 1 lemon
  • Fresh basil leaves for topping

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Pat chicken breasts dry and season with salt, pepper, garlic powder, and onion powder. Drizzle olive oil over the chicken and rub it in evenly.
  3. In a large mixing bowl, combine cherry tomatoes, minced garlic, oregano, basil, balsamic vinegar, and lemon zest. Gently toss until the tomatoes are well coated.
  4. Arrange the seasoned chicken breasts in the baking dish. Pour the tomato mixture over and around the chicken.
  5. Cover with aluminum foil (optional) and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
  6. Remove from the oven, garnish with fresh basil, and serve immediately.
