Ingredients:

  • 1 medium zucchini, sliced (about 200g)
  • 1 medium bell pepper, diced (about 150g)
  • 1 small red onion, sliced (about 100g)
  • 2 medium carrots, cut into sticks (about 150g)
  • 1 cup cherry tomatoes (about 150g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon salt (5g)
  • 1 teaspoon black pepper (5g)
  • 1 tablespoon dried Italian herbs (15g) or fresh herbs, chopped
  • Juice of 1 lemon (about 30ml)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and chop all vegetables: slice zucchini, dice bell pepper, slice onion, cut carrots into sticks, and halve cherry tomatoes.
  3. In a mixing bowl, combine all chopped vegetables, olive oil, salt, pepper, and dried Italian herbs.
  4. Spread the seasoned vegetables in an even layer on a large baking sheet.
  5. Place baking sheet in preheated oven and roast for 30-35 minutes, tossing halfway through.
  6. Remove from the oven, squeeze lemon juice over the top, and toss lightly before serving.
