Ingredients:
- 1 cup peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 0.5 tsp sea salt
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, and sea salt. Stir vigorously with a spatula until the dough 'tightens' and emulsifies into a cohesive ball.
- Using a tablespoon or small cookie scoop, portion out rounded mounds approximately 1.5 inches in diameter and place them on the prepared baking sheet.
- Using the back of a fork, press down firmly on each mound to create a cross-hatch pattern until cookies are about 1/2 inch thick.
- Bake for 10–12 minutes. The cookies should look slightly puffed and edges should be just barely darker than the center. They will be soft to the touch.
- Remove from the oven and let the cookies sit on the hot baking sheet for at least 10 minutes to firm up and set.
