Ingredients:

  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 tsp sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, and sea salt. Stir vigorously with a spatula until the dough 'tightens' and emulsifies into a cohesive ball.
  3. Using a tablespoon or small cookie scoop, portion out rounded mounds approximately 1.5 inches in diameter and place them on the prepared baking sheet.
  4. Using the back of a fork, press down firmly on each mound to create a cross-hatch pattern until cookies are about 1/2 inch thick.
  5. Bake for 10–12 minutes. The cookies should look slightly puffed and edges should be just barely darker than the center. They will be soft to the touch.
  6. Remove from the oven and let the cookies sit on the hot baking sheet for at least 10 minutes to firm up and set.
