Ingredients:

  • ½ cup (60g) Coconut Flour
  • 1 teaspoon (5g) Baking Powder
  • 1 tablespoon (12g) Granulated Sugar (or preferred sweetener)
  • Pinch of Salt
  • 3 large Eggs
  • ¾ cup (180ml) Milk (dairy or non-dairy)
  • 2 tablespoons (30ml) Melted Coconut Oil or Butter
  • ½ teaspoon (2.5ml) Vanilla Extract

Instructions:

  1. Whisk together coconut flour, baking powder, sugar, and salt in a large bowl.
  2. In a separate bowl, whisk together eggs, milk, melted coconut oil (or butter), and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, whisking until just combined. The batter will be thick.
  4. Heat a lightly oiled non-stick pan or griddle over medium heat.
  5. Pour ¼ cup of batter onto the hot pan for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve hot with your favorite toppings.
