Ingredients:
- ½ cup (60g) Coconut Flour
- 1 teaspoon (5g) Baking Powder
- 1 tablespoon (12g) Granulated Sugar (or preferred sweetener)
- Pinch of Salt
- 3 large Eggs
- ¾ cup (180ml) Milk (dairy or non-dairy)
- 2 tablespoons (30ml) Melted Coconut Oil or Butter
- ½ teaspoon (2.5ml) Vanilla Extract
Instructions:
- Whisk together coconut flour, baking powder, sugar, and salt in a large bowl.
- In a separate bowl, whisk together eggs, milk, melted coconut oil (or butter), and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, whisking until just combined. The batter will be thick.
- Heat a lightly oiled non-stick pan or griddle over medium heat.
- Pour ¼ cup of batter onto the hot pan for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve hot with your favorite toppings.
