Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1/2 cup diced cooked ham (about 3 ounces / 85g)
- 1/2 cup shredded Gruyère cheese (or Swiss) (about 2 ounces / 55g)
- 1/4 cup chopped green onions (scallions) (about 25g)
- 4 large eggs
- 1 1/2 cups heavy cream (360ml)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Pinch of nutmeg (optional)
Instructions:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté ham for a minute or two, just until lightly warmed.
- Sprinkle ham, Gruyère cheese, and green onions evenly into the pie plate or skillet.
- In a mixing bowl, whisk together eggs, heavy cream, salt, pepper, and nutmeg (if using) until well combined.
- Gently pour the custard mixture over the ham and cheese in the pie plate.
- Bake for 40-45 minutes, or until the quiche is set and the top is lightly golden brown. A knife inserted into the center should come out clean (or with just a little bit of moistness).
- Let the quiche cool for at least 10 minutes before slicing and serving.
