Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1/2 cup diced cooked ham (about 3 ounces / 85g)
  • 1/2 cup shredded Gruyère cheese (or Swiss) (about 2 ounces / 55g)
  • 1/4 cup chopped green onions (scallions) (about 25g)
  • 4 large eggs
  • 1 1/2 cups heavy cream (360ml)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of nutmeg (optional)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté ham for a minute or two, just until lightly warmed.
  3. Sprinkle ham, Gruyère cheese, and green onions evenly into the pie plate or skillet.
  4. In a mixing bowl, whisk together eggs, heavy cream, salt, pepper, and nutmeg (if using) until well combined.
  5. Gently pour the custard mixture over the ham and cheese in the pie plate.
  6. Bake for 40-45 minutes, or until the quiche is set and the top is lightly golden brown. A knife inserted into the center should come out clean (or with just a little bit of moistness).
  7. Let the quiche cool for at least 10 minutes before slicing and serving.
