Ingredients:
- 1 ¾ cups All-Purpose Flour, sifted
- ½ cup Granulated Sugar
- ½ cup Light Brown Sugar, packed
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 2 tsp Ground Cinnamon
- ½ tsp Ground Nutmeg
- 1 tsp Kosher Salt
- 3 large Eggs, lightly beaten
- ½ cup Neutral Oil (Canola or Vegetable)
- 1 tsp Vanilla Extract
- 1 ½ cups Shredded Carrots, finely grated
- 1 cup Shredded Sweetened Coconut (Desiccated or flaked)
- 1 ½ cups Powdered Sugar (Icing Sugar), sifted
- 2 Tbsp full-fat Coconut Milk (canned)
- 1 Tbsp Fresh Lime Juice
- ½ tsp Lime Zest (for garnish)
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9 x 5 inch loaf pan, or line it completely with parchment paper, leaving an overhang for easy removal.
- Combine Dry Ingredients: In a large bowl, whisk together the sifted flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- Prepare Wet Ingredients: In a separate medium bowl, whisk together the eggs, oil, and vanilla extract until emulsified.
- Combine: Pour the wet ingredients into the dry ingredients. Stir gently using a rubber spatula until just combined. Do not overmix.
- Fold in Add-ins: Gently fold in the shredded carrots and shredded coconut until evenly distributed.
- Bake: Scrape the batter into the prepared loaf pan, smoothing the top. Bake for 55–65 minutes, or until a thin skewer inserted into the center comes out clean. Tent with foil if the top browns too quickly.
- Cooling: Allow the loaf to cool in the pan for 15 minutes. Then, transfer it to a wire rack to cool completely (about 30 minutes). Ensure the loaf is fully cool before glazing.
- Prepare the Glaze: Sift the powdered sugar into a small bowl. Add the coconut milk and lime juice. Whisk thoroughly until smooth and thick. Adjust consistency with small additions of milk or powdered sugar if necessary.
- Glaze and Serve: Drizzle the glaze generously over the cooled loaf. Allow the glaze to set for 5-10 minutes before slicing and serving, optionally garnishing with lime zest.
