Ingredients:

  • 2 pounds (900g) baby potatoes, halved (preferably red or Yukon Gold)
  • 1/4 cup (60ml) olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)
  • 1 tablespoon fresh thyme, chopped (or 1 tsp dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika

Instructions:

  1. Prepare the grill by preheating it to medium heat (about 375°F or 190°C) and cleaning the grill grates with a grill brush.
  2. In a large mixing bowl, whisk together olive oil, garlic, rosemary, thyme, salt, pepper, and smoked paprika.
  3. Add the halved potatoes to the marinade and toss until well-coated. Let sit for 10-15 minutes.
  4. Place the potatoes cut-side down on the grill and grill for about 15 minutes, turning occasionally until golden brown and tender, about 25-30 minutes total.
  5. Remove the potatoes from the grill, season to taste, and serve immediately.
