Ingredients:
- 2 pounds (900g) baby potatoes, halved (preferably red or Yukon Gold)
- 1/4 cup (60ml) olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)
- 1 tablespoon fresh thyme, chopped (or 1 tsp dried)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
Instructions:
- Prepare the grill by preheating it to medium heat (about 375°F or 190°C) and cleaning the grill grates with a grill brush.
- In a large mixing bowl, whisk together olive oil, garlic, rosemary, thyme, salt, pepper, and smoked paprika.
- Add the halved potatoes to the marinade and toss until well-coated. Let sit for 10-15 minutes.
- Place the potatoes cut-side down on the grill and grill for about 15 minutes, turning occasionally until golden brown and tender, about 25-30 minutes total.
- Remove the potatoes from the grill, season to taste, and serve immediately.
