Ingredients:

  • 2.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • ½ cup honey
  • ⅓ cup low-sodium soy sauce
  • ¼ cup ketchup
  • 4 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • ½ tsp red pepper flakes (optional)
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • Sesame seeds (optional)
  • Chopped green onions (optional)

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper. Sear chicken on both sides until lightly browned (2-3 minutes per side).
  2. In a bowl, whisk together honey, soy sauce, ketchup, minced garlic, apple cider vinegar, sesame oil, grated ginger, and red pepper flakes (if using).
  3. Place seared chicken in the slow cooker. Pour the honey garlic sauce over the chicken, ensuring all pieces are coated.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  5. In a small bowl, whisk together cornstarch and cold water. Pour the slurry into the slow cooker and stir to combine. Cook on high for another 15-30 minutes, or until the sauce has thickened.
  6. If desired, shred the chicken with two forks.
  7. Garnish with sesame seeds and chopped green onions. Serve hot.
