Ingredients:
- 2.5 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- Salt and black pepper, to taste
- ½ cup honey
- ⅓ cup low-sodium soy sauce
- ¼ cup ketchup
- 4 cloves garlic, minced
- 1 tbsp apple cider vinegar
- 1 tsp sesame oil
- 1 tsp grated ginger
- ½ tsp red pepper flakes (optional)
- 2 tbsp cornstarch
- 2 tbsp cold water
- Sesame seeds (optional)
- Chopped green onions (optional)
Instructions:
- Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper. Sear chicken on both sides until lightly browned (2-3 minutes per side).
- In a bowl, whisk together honey, soy sauce, ketchup, minced garlic, apple cider vinegar, sesame oil, grated ginger, and red pepper flakes (if using).
- Place seared chicken in the slow cooker. Pour the honey garlic sauce over the chicken, ensuring all pieces are coated.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- In a small bowl, whisk together cornstarch and cold water. Pour the slurry into the slow cooker and stir to combine. Cook on high for another 15-30 minutes, or until the sauce has thickened.
- If desired, shred the chicken with two forks.
- Garnish with sesame seeds and chopped green onions. Serve hot.
