Ingredients:

  • 4 cups (960ml) Heavy Cream
  • 1/2 cup (100g) Granular Erythritol (or your preferred Keto-friendly sweetener)
  • 2 tablespoons (15g) Unsalted Butter
  • 1/4 teaspoon Vanilla Extract

Instructions:

  1. In the saucepan, whisk together the heavy cream, erythritol, and butter.
  2. Bring the mixture to a gentle simmer over medium-low heat. Reduce heat to low and maintain a very gentle simmer, stirring frequently.
  3. Continue simmering, stirring occasionally, for 30-45 minutes, or until the mixture has reduced by about half and thickened to a consistency similar to condensed milk. It should coat the back of a spoon.
  4. Remove from heat and stir in the vanilla extract.
  5. Allow the condensed milk to cool completely before transferring it to a jar or airtight container. It will thicken further as it cools. Store in the refrigerator for up to a week.
