Ingredients:
- 1.5 lbs (680g) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 1 red bell pepper, seeded and chopped
- 1 (28 ounce/794g) can crushed tomatoes
- 1/2 cup (120ml) dry white wine
- 2 tablespoons Ouzo
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and freshly ground black pepper to taste
- 1/4 cup (15g) chopped fresh parsley, for garnish
- 4 ounces (115g) feta cheese, crumbled
Instructions:
- Peel and devein the shrimp. Chop the onion, garlic, and bell pepper. Measure out all other ingredients.
- Heat olive oil in the skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and bell pepper and cook for another 2 minutes until fragrant.
- Pour in the crushed tomatoes and white wine. Stir in the oregano, red pepper flakes, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally, to allow the flavors to meld.
- Gently stir in the shrimp and Ouzo. Cook until the shrimp are pink and cooked through, about 3-5 minutes, depending on their size. Be careful not to overcook them.
- Remove from heat. Sprinkle with crumbled feta cheese and fresh parsley. Serve immediately.
