Ingredients:

  • 1 cup (90g) rolled oats (old-fashioned or quick-cooking)
  • ½ cup (120g) creamy peanut butter (natural or regular)
  • ⅓ cup (75ml) honey or maple syrup
  • ¼ cup (30g) mini chocolate chips
  • 2 tablespoons (16g) ground flaxseed meal (optional)
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of sea salt

Instructions:

  1. In a large bowl, combine the rolled oats, chocolate chips, flaxseed meal (if using), and salt.
  2. Add the peanut butter, honey (or maple syrup), and vanilla extract to the bowl.
  3. Stir all ingredients together until thoroughly combined and a sticky dough forms.
  4. Cover the bowl and chill in the refrigerator for at least 30 minutes.
  5. Remove the dough from the refrigerator and roll the mixture into 1-inch balls.
  6. If desired, roll the energy bites in cocoa powder, shredded coconut, or other desired toppings.
  7. For firmer bites, chill for another 15-30 minutes before serving.
