Ingredients:
- 1 cup (90g) rolled oats (old-fashioned or quick-cooking)
- ½ cup (120g) creamy peanut butter (natural or regular)
- ⅓ cup (75ml) honey or maple syrup
- ¼ cup (30g) mini chocolate chips
- 2 tablespoons (16g) ground flaxseed meal (optional)
- 1 teaspoon (5ml) vanilla extract
- Pinch of sea salt
Instructions:
- In a large bowl, combine the rolled oats, chocolate chips, flaxseed meal (if using), and salt.
- Add the peanut butter, honey (or maple syrup), and vanilla extract to the bowl.
- Stir all ingredients together until thoroughly combined and a sticky dough forms.
- Cover the bowl and chill in the refrigerator for at least 30 minutes.
- Remove the dough from the refrigerator and roll the mixture into 1-inch balls.
- If desired, roll the energy bites in cocoa powder, shredded coconut, or other desired toppings.
- For firmer bites, chill for another 15-30 minutes before serving.
