Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, diced
  • 1 cup (200g) long-grain rice (uncooked)
  • 2 cups (480ml) chicken broth
  • 1 cup (150g) shredded cheddar cheese
  • 1 teaspoon (5g) garlic powder
  • 1 teaspoon (5g) onion powder
  • 1 teaspoon (5g) paprika
  • ½ teaspoon (2.5g) salt
  • ½ teaspoon (2.5g) black pepper
  • 1 cup (150g) mixed vegetables (e.g., peas, carrots, corn)
  • 4 large sheets of heavy-duty aluminum foil
  • Olive oil or cooking spray (for greasing)

Instructions:

  1. Preheat your grill or prepare a campfire.
  2. In a mixing bowl, combine diced chicken, rice, chicken broth, garlic powder, onion powder, paprika, salt, pepper, and mixed vegetables.
  3. Lay out a sheet of aluminum foil and lightly grease it with olive oil or cooking spray.
  4. Spoon the chicken and rice mixture onto the center of the foil.
  5. Sprinkle cheddar cheese over the top of the mixture.
  6. Fold the foil over the ingredients, crimping the edges tightly to seal the packet.
  7. Place packets onto the grill or over the campfire coals and cook for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
  8. Carefully open the packets (watch for steam!) and serve immediately.
