Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts, diced
- 1 cup (200g) long-grain rice (uncooked)
- 2 cups (480ml) chicken broth
- 1 cup (150g) shredded cheddar cheese
- 1 teaspoon (5g) garlic powder
- 1 teaspoon (5g) onion powder
- 1 teaspoon (5g) paprika
- ½ teaspoon (2.5g) salt
- ½ teaspoon (2.5g) black pepper
- 1 cup (150g) mixed vegetables (e.g., peas, carrots, corn)
- 4 large sheets of heavy-duty aluminum foil
- Olive oil or cooking spray (for greasing)
Instructions:
- Preheat your grill or prepare a campfire.
- In a mixing bowl, combine diced chicken, rice, chicken broth, garlic powder, onion powder, paprika, salt, pepper, and mixed vegetables.
- Lay out a sheet of aluminum foil and lightly grease it with olive oil or cooking spray.
- Spoon the chicken and rice mixture onto the center of the foil.
- Sprinkle cheddar cheese over the top of the mixture.
- Fold the foil over the ingredients, crimping the edges tightly to seal the packet.
- Place packets onto the grill or over the campfire coals and cook for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
- Carefully open the packets (watch for steam!) and serve immediately.
