Ingredients:

  • 1 tablespoon olive oil
  • 4 ounces bacon, diced
  • 1 small onion, finely chopped
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg
  • 1 cup Gruyère cheese, shredded
  • 2 tablespoons fresh chives, chopped

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add bacon and cook until crisp. Add onion and sauté until softened. Drain any excess grease.
  3. In a mixing bowl, whisk together eggs, heavy cream, milk, salt, pepper, and nutmeg.
  4. Stir in the cooked bacon and onion mixture, and most of the Gruyère cheese (reserve some for topping).
  5. Pour the mixture into the prepared pie plate.
  6. Sprinkle the remaining Gruyère cheese over the top.
  7. Bake for 40-45 minutes, or until the quiche is set and golden brown on top. A knife inserted near the center should come out clean.
  8. Let the quiche cool for 10-15 minutes before slicing and serving. Garnish with fresh chives, if desired.
