Ingredients:
- 1 tablespoon olive oil
- 4 ounces bacon, diced
- 1 small onion, finely chopped
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of nutmeg
- 1 cup Gruyère cheese, shredded
- 2 tablespoons fresh chives, chopped
Instructions:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add bacon and cook until crisp. Add onion and sauté until softened. Drain any excess grease.
- In a mixing bowl, whisk together eggs, heavy cream, milk, salt, pepper, and nutmeg.
- Stir in the cooked bacon and onion mixture, and most of the Gruyère cheese (reserve some for topping).
- Pour the mixture into the prepared pie plate.
- Sprinkle the remaining Gruyère cheese over the top.
- Bake for 40-45 minutes, or until the quiche is set and golden brown on top. A knife inserted near the center should come out clean.
- Let the quiche cool for 10-15 minutes before slicing and serving. Garnish with fresh chives, if desired.
