Ingredients:

  • 1.5 lbs (680g) red potatoes, washed and cut into 1-inch chunks
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and chop the red potatoes into roughly 1-inch chunks.
  3. In a large bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Ensure potatoes are evenly coated.
  4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper (if using).
  5. Roast in the preheated oven for 35-45 minutes, or until the potatoes are tender and golden brown, flipping halfway through for even browning.
  6. If using, sprinkle grated Parmesan cheese over the potatoes during the last 5 minutes of cooking.
  7. Remove from oven and serve immediately.
