Ingredients:
- 1.5 lbs (680g) red potatoes, washed and cut into 1-inch chunks
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- Wash and chop the red potatoes into roughly 1-inch chunks.
- In a large bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Ensure potatoes are evenly coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper (if using).
- Roast in the preheated oven for 35-45 minutes, or until the potatoes are tender and golden brown, flipping halfway through for even browning.
- If using, sprinkle grated Parmesan cheese over the potatoes during the last 5 minutes of cooking.
- Remove from oven and serve immediately.
