Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp toasted sesame oil
  • 6 cloves garlic, finely grated
  • 2 tbsp fresh ginger, grated
  • 1 tsp red pepper flakes
  • 1 tbsp cornstarch
  • 1 tbsp cold water

Instructions:

  1. Season the chicken thighs with salt and pepper and place them in a single layer at the bottom of the slow cooker.
  2. In a medium bowl, whisk together the soy sauce, honey, vinegar, sesame oil, grated garlic, grated ginger, and red pepper flakes. Pour the mixture over the chicken.
  3. Cover and cook on Low for 6 hours or High for 3 hours.
  4. Remove the cooked chicken to a platter. Pour the remaining liquid into a small saucepan.
  5. Whisk together cornstarch and water, stir into the simmering sauce for 2-3 minutes until glossy and thick, then pour over the chicken.
