Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/3 cup low-sodium soy sauce
- 1/4 cup honey
- 2 tbsp apple cider vinegar
- 1 tbsp toasted sesame oil
- 6 cloves garlic, finely grated
- 2 tbsp fresh ginger, grated
- 1 tsp red pepper flakes
- 1 tbsp cornstarch
- 1 tbsp cold water
Instructions:
- Season the chicken thighs with salt and pepper and place them in a single layer at the bottom of the slow cooker.
- In a medium bowl, whisk together the soy sauce, honey, vinegar, sesame oil, grated garlic, grated ginger, and red pepper flakes. Pour the mixture over the chicken.
- Cover and cook on Low for 6 hours or High for 3 hours.
- Remove the cooked chicken to a platter. Pour the remaining liquid into a small saucepan.
- Whisk together cornstarch and water, stir into the simmering sauce for 2-3 minutes until glossy and thick, then pour over the chicken.
