Ingredients:
- 2 large flatbreads (approx. 12 inches/30cm each)
- 2 tablespoons olive oil (30ml)
- 8 ounces (225g) Italian sausage, casings removed
- 1 small onion, finely chopped (approx. ½ cup/75g)
- 2 cloves garlic, minced
- 5 ounces (140g) fresh spinach, roughly chopped
- 1 cup (225g) ricotta cheese
- ½ cup (50g) grated Parmesan cheese
- ¼ teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- ½ cup (50g) shredded mozzarella cheese
Instructions:
- Brown the sausage in a large skillet over medium heat, breaking it up with a spoon.
- Add the chopped onion to the skillet and cook until softened. Add the minced garlic and cook until fragrant. Stir in the spinach and cook until wilted. Season with salt, pepper, and red pepper flakes (if using). Drain off any excess grease.
- Preheat your oven to 400°F (200°C). Place the flatbreads on a baking sheet lined with parchment paper (optional, but prevents sticking).
- Spread ricotta cheese evenly over the flatbreads, leaving a small border. Spoon the sausage and spinach mixture over the ricotta. Sprinkle with Parmesan and mozzarella cheese.
- Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly and the flatbread is golden brown.
- Let the flatbread pizza cool slightly before slicing and serving.
