Ingredients:

  • 1 tablespoon smoked paprika (15 ml)
  • 1 teaspoon ground coriander (5 ml)
  • 1 teaspoon ground cumin (5 ml)
  • ½ teaspoon garlic powder (2.5 ml)
  • ½ teaspoon onion powder (2.5 ml)
  • ½ teaspoon dried thyme (2.5 ml)
  • ¼ teaspoon cayenne pepper (1.25 ml) (optional, for a bit of kick!)
  • 1 teaspoon kosher salt (5 ml)
  • ½ teaspoon black pepper (2.5 ml)
  • 4 salmon fillets, skin on or off, about 6 ounces (170g) each
  • 2 tablespoons olive oil (30 ml)
  • 1 lemon, cut into wedges (for serving)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up (optional).
  2. In a small bowl, combine all the spice rub ingredients (smoked paprika, coriander, cumin, garlic powder, onion powder, thyme, cayenne pepper (if using), salt, and pepper). Mix well to ensure even distribution.
  3. Pat the salmon fillets dry with paper towels. Brush the salmon fillets with olive oil on both sides.
  4. Generously rub the spice mixture onto all sides of the salmon fillets, pressing gently to ensure the spices adhere.
  5. Place the seasoned salmon fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
  6. Remove from oven and let rest for a few minutes. Serve immediately with lemon wedges.
