Ingredients:
- 1 tablespoon smoked paprika (15 ml)
- 1 teaspoon ground coriander (5 ml)
- 1 teaspoon ground cumin (5 ml)
- ½ teaspoon garlic powder (2.5 ml)
- ½ teaspoon onion powder (2.5 ml)
- ½ teaspoon dried thyme (2.5 ml)
- ¼ teaspoon cayenne pepper (1.25 ml) (optional, for a bit of kick!)
- 1 teaspoon kosher salt (5 ml)
- ½ teaspoon black pepper (2.5 ml)
- 4 salmon fillets, skin on or off, about 6 ounces (170g) each
- 2 tablespoons olive oil (30 ml)
- 1 lemon, cut into wedges (for serving)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up (optional).
- In a small bowl, combine all the spice rub ingredients (smoked paprika, coriander, cumin, garlic powder, onion powder, thyme, cayenne pepper (if using), salt, and pepper). Mix well to ensure even distribution.
- Pat the salmon fillets dry with paper towels. Brush the salmon fillets with olive oil on both sides.
- Generously rub the spice mixture onto all sides of the salmon fillets, pressing gently to ensure the spices adhere.
- Place the seasoned salmon fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
- Remove from oven and let rest for a few minutes. Serve immediately with lemon wedges.
