Ingredients:
- 1 cup couscous (200g)
- 1 ¼ cups vegetable broth or water (300ml)
- 2 tablespoons olive oil (30ml)
- 1 teaspoon salt (5g)
- 1 teaspoon ground cumin (2g)
- 1 teaspoon smoked paprika (2g)
- ½ teaspoon ground coriander (1g)
- ¼ teaspoon black pepper (1g)
- ½ teaspoon cayenne pepper (optional, for heat) (1g)
- ¼ cup chopped fresh parsley (15g)
- ¼ cup chopped fresh mint (15g)
- Juice of ½ lemon (15ml)
Instructions:
- In a medium saucepan, bring the vegetable broth or water to a boil.
- Add salt and olive oil to the boiling liquid.
- Stir in the couscous, cover, and remove from heat.
- Let the couscous sit for about 5 minutes, allowing it to absorb the liquid.
- After resting, use a fork to fluff the couscous gently.
- In a small bowl, combine the ground cumin, smoked paprika, coriander, black pepper, and cayenne (if using).
- Stir the spice mixture into the couscous until well incorporated.
- Fold in the chopped parsley, mint, and lemon juice.
- Adjust seasoning to taste and serve warm alongside your favorite dishes.
