Ingredients:

  • 1 cup couscous (200g)
  • 1 ¼ cups vegetable broth or water (300ml)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon salt (5g)
  • 1 teaspoon ground cumin (2g)
  • 1 teaspoon smoked paprika (2g)
  • ½ teaspoon ground coriander (1g)
  • ¼ teaspoon black pepper (1g)
  • ½ teaspoon cayenne pepper (optional, for heat) (1g)
  • ¼ cup chopped fresh parsley (15g)
  • ¼ cup chopped fresh mint (15g)
  • Juice of ½ lemon (15ml)

Instructions:

  1. In a medium saucepan, bring the vegetable broth or water to a boil.
  2. Add salt and olive oil to the boiling liquid.
  3. Stir in the couscous, cover, and remove from heat.
  4. Let the couscous sit for about 5 minutes, allowing it to absorb the liquid.
  5. After resting, use a fork to fluff the couscous gently.
  6. In a small bowl, combine the ground cumin, smoked paprika, coriander, black pepper, and cayenne (if using).
  7. Stir the spice mixture into the couscous until well incorporated.
  8. Fold in the chopped parsley, mint, and lemon juice.
  9. Adjust seasoning to taste and serve warm alongside your favorite dishes.
