Ingredients

  • 400g can chopped tomatoes
  • 110g pack chorizo (unsliced)
  • 140g wedge Savoy cabbage
  • Sprinkling dried chilli flakes
  • 410g can chickpeas, drained
  • 1 chicken or vegetable stock cube

Instructions

  1. In a medium pan, heat the chopped tomatoes and add a canful of water.
  2. While the tomatoes are heating, chop the chorizo into chunky pieces and shred the cabbage.
  3. Add the chorizo, cabbage, dried chilli flakes, and chickpeas to the pan.
  4. Crumble in the stock cube and stir well.
  5. Cover the pan and let it bubble over high heat for 6 minutes, or until the cabbage is tender.
  6. Serve in bowls and enjoy with crusty or garlic bread.
