Hearty Roast Chicken with Braised Celery

Ingredients
- 1 tbsp butter
- 4 whole celery hearts, halved lengthways
- 3 carrots, chopped
- 4 bay leaves
- A few sprigs of thyme
- 6 garlic cloves, skin left on
- 600ml fresh chicken stock
- 1 chicken, weighing 1½ kg (3 lb 5 oz)
- Small bunch of parsley, chopped
Instructions
- Preheat your oven to 200°C (180°C fan) or gas mark 6.
- In a large shallow ovenproof casserole dish, heat the butter over medium heat.
- Add the halved celery and chopped carrots, frying for about 4-5 minutes until slightly softened.
- Stir in the bay leaves, thyme, garlic, and seasonings, then pour over the chicken stock.
- Bring the mixture to a simmer, then turn off the heat.
- Nestle the chicken in the dish, ensuring it s surrounded by the vegetables.
- Season the chicken well, then transfer the dish to the oven.
- Roast for 1 hour and 40 minutes, or until the chicken skin is golden and crispy.
- Remove the chicken from the oven and let it rest for 20 minutes on a cutting board.
- While the chicken rests, reheat the celery and sauce, then sprinkle with chopped parsley before serving.
- Carve the chicken into portions and serve alongside the braised celery for guests to help themselves.
