Sticky Lime Roast Chicken Recipe

Ingredients

  • 4 limes, halved
  • 2 kg chicken
  • 8 garlic cloves (4 whole, 4 chopped)
  • 1 chili, deseeded and chopped
  • Large piece of ginger
  • Small bunch of coriander stalks
  • 2 tbsp soft brown sugar
  • 1 tbsp fish sauce
  • Sliced cucumber, shredded spring onions, and coriander sprigs, to serve

Instructions

  1. Preheat your oven to 190°C (170°C fan/gas mark 5).
  2. Squeeze the juice of all the limes into a bowl and place the lime halves inside the chicken cavity along with the whole garlic, half of the chopped chili, half of the chopped ginger, and the coriander stalks.
  3. Place the chicken in a roasting tin and roast for 1 hour.
  4. While the chicken is roasting, prepare the sticky glaze. In a blender, combine the remaining chopped garlic, chili, ginger, lime juice, brown sugar, and fish sauce. Blend until smooth.
  5. Transfer the glaze mixture to a small pan and reduce over low heat until thick enough to coat the chicken.
  6. After 1 hour, add some water to the bottom of the roasting tin. Pour half of the prepared glaze over the chicken and continue roasting for another 45 minutes, covering with foil if it starts to brown too quickly.
  7. Once fully cooked, let the chicken rest for a few minutes. Pour the juices from the roasting tray into the remaining glaze, discarding any excess fat, and simmer over low heat. Adjust seasoning with more sugar or fish sauce, if necessary.
  8. Serve the chicken with sliced cucumber, shredded spring onions, and coriander sprigs, with the gravy on the side.
